This easy to make and absolutely delicious, succulent vegetable soup can help you drop the pounds in no time.

Yields: 3-4 Servings
1 kgBaby Potatoes
1 Bell Pepper
1 medium Onion
3 tbspVegetable Oil
3 tbspBouillon or 2 Knorr Vegetable Cubes
1 pinchLow-Sodium Salt
1 pinchcracked Black Pepper
1Dice the Bell pepper and the onion small and roast it with the Vegetable oil in a big pot until soft and golden.
2Slice and dice the baby potatoes and the carrots while you fry the other vegetables.
3Then add the carrots slices and potato dices and fill the pot with 1 litre of boiling water.
4Add the bouillon, parsley and Salt & pepper also right away, to unfold their full flavour; and cook everything, for about 45 min. on medium heat, until the carrots and potatoes are soft.
