Finest Vegan Spring Soup. More than delicious!

3 tbsp Olive Oil
10 Baby Potatoes
1 small Courgette
1 medium Onion
2 Bell Peppers in different colours
8 small Champignons
1 cereal bowl full of Mixed Vegetables (fresh or frozen)
2 tbsp Bouillon /or 2 Vegetable (Soup) Cubes
2 tbsp Parsley
1 pinch Low-Sodium Salt
1 pinch cracked Black Pepper
1Cut your vegetables in small slices and dices. Add the oil, parsley, salt & pepper and roast your vegetables on medium heat in a pot, until the bottom of the pot is covered in vegetable juices.
2Slice and dice the raw spring potatoes and add them to the vegetables.
3Also add 0.8l of boiling water and the bouillon or vegetable cubes.
4Add the Vegetable Mix (like Carrots, Sweetcorn, Peas & Green Beans (frozen or fresh))
5Cook everything for about 15 minutes on medium heat.
Very good dinner solution when you're trying to lose weight!
