These very tasty Cinnamon muffins will burn your calories while you eat them (thanks to the metabolism speeding Cinnamon)

Ingredients

Muffins

300 g Self Raising Flour

150 g Caster Sugar

200 ml (Soya) Milk

2 free range Eggs

1 tsp Vanilla Extract

60 g (Soya) Magarine

2 tbsp ground Cinnamon

Icing

100 g (Soya) Margarine

300 g Icing Sugar

2 tbsp (Soya) Milk

1 tsp Vanilla Extract

few drops of red & blue Food Colouring

Directions

Muffins

1Preheat the oven at 180 degrees.

2Melt the margarine in a small pot/microwave (only a few seconds!) and mix it with the flour, sugar, cinnamon, eggs and milk.

3When you have a really gooey dough, add the vanilla extract and mix thoroughly.

4Spoon the mixture into muffin wrappers, until the wrappers are almost filled.

5Put the muffins onto the middle tray for 20-25 minutes, until they look golden brown.

6Tip: To test if they are ready to come out of the oven, probe one of them in the centre with a metal wire needle / a roulade skewer. If there is no goo sticking to the wire, then they are fully baked through. Don’t leave them in for too long. You want to keep the dough as fluffy as possible.

7Let them cool down for about 30 minutes, before you decorate them.

Icing

1Beat the butter in a bowl.

2Add a little of icing sugar at a time until smooth and creamy.

3Add the soya milk and whisk.

4Add the vanilla extract and whisk again.

5Take a few spoons of icing and mix it with a couple of drops of food colouring

Decoration

1Decorate the muffins (here with Chocolate and Coconut sprinkles) and then show off with them ;)
